  • 2 to 2½ pounds beef chuck or brisket, cut into chunks

  • 2 cloves garlic, minced

  • 5 tablespoons fish sauce

  • 2½ teaspoons five-spice powder

  • 1½ teaspoons brown sugar

  • 3 tablespoons oil

  • Lemongrass, garlic, onion, tomato paste

  • Water, coconut water

  • Star anise, black pepper, chili powder, ground annatto, paprika

  • Carrots, soy sauce, chili oil

  • Wide rice noodles or egg noodles

  • Cilantro, Thai basil, raw onion, lime wedges for garnish

Instructions:

  1. Marinate beef in a mix of garlic, ginger, fish sauce, five-spice, and sugar.

  2. In a pot, sauté lemongrass and garlic in oil, then add onions.

  3. Brown beef in the pot, add tomato paste, water, coconut water, and spices. Simmer for 1 hour.

  4. Add carrots, seasonings, and simmer for 40 more minutes.

  5. Serve over cooked noodles, garnished with herbs and lime.
